We called this poor man's fudge. Mom cooked it in a cast iron skillet. This is the only fudge I'll eat. Thanks Tammy!!! It brought back a lot of memories.
My mom also made hers in a cast iron skillet. But I really liked it when she made a mistake especially when we got to eat it on a spoon it would stick to a spoon but but you couldn't pick it up with your fingers that was the best
My husband and I are making our menu for the holidays and I was talking about momma’s fudge but didn’t have a recipe. Knew the ingredients but it’s never that simple. We knew Tammy would have a good recipe but this is like momma’s. Except mom didn’t have the thermometer and used that heavy old cast iron skillet.

I am so happy I watched this video. My fudge has been dry at times. I thought it was ruined because it was hard sugar. Now, I see I can add a little milk and fix it. My recipe uses sugar, condensed milk, chocolate chips, marshmallow creme and vanilla. Thanks for the tip!!! My Mom's recipe too!!!
Marshmallow cream! I couldn't remember what was different about my mother's fudge. That's it, Marshmallow cream. I will look for a recipe that has it. Thank you for posting your comment.
Our mom would make the fudge every year. She made the short cut kind with marshmallow cream and she would beat the heck out of it till she got tired lol. My favorite was the chocolate with about a half a cup or more of the creamy peanut butter in it. If she put nuts in it it would be chopped walnuts. Fond memories. I didn’t know that you could fix fudge like you did on there. That is a great tip. Just microwave it and add a little bit more of the milk. It sure did turn out good.

So true! She cooks just like my family...so much so I wonder if we aren't related sometimes! That's not to say I don't learn from her because I do...but it is so similar I can't help but wonder. If not related definitely from the same area at some point in the past 100 years or so....
My Mom always made fudge with jarred marshmallows, it was like eating pure heaven. I had a buddy that would make fudge very similar to your first batch and when it was done, he would leave it out in the air for a couple weeks until it got hard as a rock. Sometimes he would find a piece in his truck 6 months later and it was still hard as a rock. It tasted good if you did not break a tooth. I always ate his fudge but did not have the heart to tell him it was awful that way but he liked it and I guess that is all that counts. I remember Moms was soft, we would always leave some out for Santa and in the morning part of it would be gone and one piece left would always have finger marks in it. Good times. Both of my Great Grandmothers had their secret recipe holiday fudge. One out of Virginia born in 1892 one born out of Oklahoma in 1889 one passed in 1968 and my mother got that recipe. The other paspassed in the summer of 1984 at the age of 92 my aunt gave that recipe to my mother too, when my mother passed in 1999. My little sister got one of the recipes and my older sister got the other. Two great fudge recipes. Covid shuts down the states and I want fudge! I call my older sister ask for the recipe she hesitates to give it to me, but finally emails it to me. I the hesitation I ask my little sister if she has the fudge recipe she makes a copy and sends it to me with a box of fudge. Yummy I look at the recipe and it is a basically your recipe. Best thing is I look at the email recipe and wouldn't you know it, they are exactly the same. Funny thing is my wife's grandma's recipe is THE SAME FUDGE RECIPE! Glory, Glory just goes to show you all Grandma's have the same secret recipe.

Yum! I thought I was the only one that would switch out spatulas. My Aunt showed me that trick when she came over on New Year's Eve to make fudge every year. Her fudge was the best. Have you ever went to someone's house and they said "Here try my Mommy's fudge, it's delicious!" You take a piece of it and it's nothing but sugar granules. I hate when that happens. hahaha Everybody loves their own Mama's cooking, don't they? You two have a very Merry Christmas and a blessed New Year to come!
That usually happens if you start it out on too high a heat. It doesn't let the sugar dissolve.
Really loved the fudge secrets you offered - particularly the one sugar granule and the water test. Wealth of information!

I missed the amount of sugar you used in the Old Fashion Fudge also how much vanilla and the fudge has to reach whatemperature . I'm new to your show and I'llk be watching from now on. Thank you for being out there for us. Pat K.
I use my Le Creuset Dutch oven to cook my fudge on my gas stove - and my mama’s recipe is the original fantasy fudge recipe (not the one they do now), and my tweak is to beat it in my KitchenAid! I have the recipe to do it in the microwave, but haven’t been brave enough to do that with very expensive ingredients!! My grandmother made hers more like yours and beat it by hand - both are good, but they are not the same taste! TFS.

I could eat chocolate fudge dry or creamy or too liquidy or too sugary or with or without nuts!!! It looks great!!
I make alot of candy and 30 years ago when I was taught in candy classes for fudge never spread it pour it out only in pan and hit the pan a few times to get it settled and that's it ..my momma did it the same way too. I know many want to help spread it lol..I did too until my momma yelled noooo and the candy classes said no it makes the top rough, smeared and not pretty .lol .....I love everything you made ❤ thank you

I tell you what, what I’ve learned from watching all these fudge videos is that everybody does their fudge different but that’s good cause now I know what to do in any circumstance- I appreciate you showing me your so called ‘mistake’ this was really helpful in my endeavors- and as far as divinity goes, my mom and I i’ve burnt out so many mixer motors trying to get that to its right consistency- good memories though

My favorite, grandma used to make this, so we could have it after school
One time my fudge didn't harden so I rolled it into balls,then chopped nuts and called them truffles...It was messy but so delicious...
I did the same thing one year and used it as frosting there are no mistakes in the kitchen if you get creative!

Mistakes get made, no big deal if you know how to fix it. My Grandmama always made fudge from scratch every Christmas but her recipe used confectioners sugar. I miss that recipe because I lost all my Grandmamas recipes in a fire many years ago. Of everything we lost and I know life is more important but those recipes were a part of my Grandmama I can never get back. 🙂❤

Thanks for the tip for fixing the fudge if it seems a bit dry I love how you could I wish I had a mom that taught me these things I love baking and when I mess something up I find ways to fix it and the way I look at it you do the best you know how I self taught myself to bake it all about trial and error lol

I use to always make fudge for Christmas. I use the one on the marshmallow creme. Fantasy Fudge I use to make it in the microwave it was alot easier. I haven't made it in years. Thanks for sharing yours.

We made it the same way but more cocoa and we like it harder not soft.. just whole pecans and a little more p butter..we put it in a buttered glass plate to harden then cut it..it's delish😋

Your videos are comforting - period. *Great choice of music for your holiday video series - almost moving. Fudge looks delicious.
You can cook it in the microwave, which is faster. Combine the ingredients in a buttered plastic bowl and nuke it for 2:22, then cold water test a small blob. Stir it, then do it again for another 2:22, after which it might be done. If it's still not hard ball stage, do it in 0:30 increments until it is. Just don't overdo it or you'll have chocolate concrete.
This is how we made it in Texas, my mom NEVER followed a recipe which became a big issue for me when I was getting married and wanted to make my own cookbook -- it was too funny, never did figure out what a pinch or smidgen was.
